This is a savoury tasting rice noodle stir fry in which we are using crab meat and a homemade stir fry sauce. The 3mm wide rice noodles are best for this recipe as they really soak up the sauce well, and we have used pre cooked canned crab meat, but if you use fresh crabmeat just cook it before getting started with the recipe.

Step 1: First soak 150g of rice noodles in some cold water for about 20 minutes. Use the noodles that are 3mm wide.
Step 2: Now crush 2 dried chillies, 1 shallot and 1 clove of garlic in a mortar and pestle until you are left with a thick paste.
Step 3: Next we can make the stir fry sauce. Add 1 tbsp of water, 1 tbsp of tamarind paste, 1 1/2 tbsp of fish sauce, and 1 1/2 tbsp of palm sugar to a saucepan, and heat on a low heat whilst stirring until the palm sugar dissolves into the sauce.
Step 4: Now heat 2 tbsp of cooking oil in a wok or pan on a high heat. When hot, drain the rice noodles and add them to the wok along with the sauce and the paste that we just made.
Step 5: Stir fry the noodles with the sauce and paste for a couple of minutes until they nearly cooked, then add in 1 can of cooked crab meat and stir fry with the noodles for about 1 minute. Add in a small dash of water to stop the noodles getting too dry.
Step 6: Finally add in 1 cup of beansprouts, and 1/2 cup of sliced spring onion, stir in with the noodles, then turn off the heat and serve. Garnish with sugar and chilli flakes and any other condiments you like!
