A simple recipe involving trout which has been marinated in a turmeric paste, which is then fried and topped with garlic, and finally served with a spicy seafood dipping sauce. We like to use trout fillets with the skin still on, which we then fry until is is nice and crispy.

2 trout fillets
- turmeric 1/2 tbsp 1/2 teaspoon ground pepper 3 cloves sliced garlic
- shrimp paste 1/3 tbsp 1/3 teaspoon salt
Step 1: Start by placing 2 trout fillets with the skin on into a mixing bowl along with 1/2 tbsp of turmeric, 1/3 tbsp of shrimp paste, 1/3 teaspoon of salt, and 1/2 teaspoon of ground pepper. Rub the ingredients into the trout and leave to marinate for 20 minutes.
Step 2: Now deep fry 3 cloves of sliced garlic until they are light brown, then scoop them out of the oil and set aside on some paper towel.
Step 3: Once the trout fillets have finished marinating, deep fry them in the oil you used to fry the garlic. The exact time will depend on the size and thickness of the fillets you are using, but we fried ours until the skin was extra crispy but you can fry until the fish is cooked to your liking.
