If you like your fried rice spicy and rich in flavour, then this recipe is perfect for you. For many people ordinary fried rice can seem a little bland, but in this recipe we are using chilli paste which really adds strength to the flavour.
We have served ours with shrimp, but you could use other meats if you prefer. The dish is really simply to make, and should be ready in under 20 minutes including preparation time, and its a great way to use up leftover rice.

Step 1: Add 2 tbsp of cooking oil to a wok, and heat on a hight heat, then add 3 cloves of chopped garlic, and fry in the oil for about 20 seconds. Then add 1/2 cup of sliced onion and stir fry for about half a minute.
Step 2: Now add 3 tbsp of chilli paste, and mix until the chilli paste begins to melt. Then add 200g of peeled shrimp, stir fry for about 20 seconds, and add 2 cups of steamed rice which has been allowed to cool and is preferably around 24 hours old.
Step 3: Mix everything together whilst frying for roughly 1 minute, then add in 1 hard boiled egg which has been cut into small pieces. Mix the egg in with the rice, then you can season – so add 2 tbsp of fish sauce, 3 chopped red bird eye chillies, 1 tbsp of sugar, and 2 chopped spring onions. Stir fry everything together for a final 1 to 2 minutes then serve and enjoy! Serve with 2 quarters of a hard boiled egg, and any other fresh vegetables you like.
