A deliciously sweet steamed coconut custard served inside a steamed butternut squash. Pleasing to the eye and to the the tastebuds, this different and interesting dessert is the perfect recipe for those of you looking to try something a bit different!

Cooking instructions
Step 1: Prepare the butternut squash as shown in the video – cut the top inch off to use as our lid, and cut along the curve at the base. Use a spoon to scoop out all the seeds and fibrous material from inside the butternut squash.
Step 2: Place the butternut squash into a steamer and steam for about 15 minutes
Step 3: Pour the 2 eggs, 100g palm sugar, and 100ml of coconut milk into a bowl and mix everything together.
Step 4: Pour the custard mixture into the butternut squash and place the lid on, and steam for a further 15 minutes until the custard is cooked.
Step 5: To serve, simply cut the squash into quarters (lengthways)
