Drunken noodles is a popular spicy noodle dish served throughout Thailand. They are made 10mm wide rice noodles, which are much wider than the 3mm wide rice noodles used in pad thai. They are commonly served with a good amount of spicy heat, which makes it the perfect accompaniment to an ice cold beer!

Step 1: Soak the rice noodles in a bowl of warm water for 10 minutes. Make sure that the noodles are completely covered by the water.
Step 2: Meanwhile place 200g of sliced pork in a mixing bowl and add 2 tbsp of oyster sauce. Mix the oyster sauce into the pork, and leave to marinade for 10 minutes.
Step 3: Now add 2 tbsp of fish sauce, 3 tbsp of dark soy sauce, and 1 tbsp of sugar to a bowl and mix together until you are left with a thick sauce.
Step 4: Heat some cooking oil in a wok or pan and add 2 finely chopped garlic cloves and 200g of sliced pork. Stir and fry until the pork is half cooked. Now add the 200g of rice noodles (Make sure to drain them properly first!) and briefly mix together. Follow by adding the thick sauce that we prepared earlier to the pan, and begin stirring. Also add 1/4 yellow bell pepper and 1/4 red bell pepper (sliced), 50g of chopped green beans and 5 chopped red bird eye chillies.
Step 5: Stir fry everything for about 1 to 2 minutes, then sprinkle a dash of water into the pan, and continue stir frying for another 1 to 2 minutes.
Step 6: Now add 2 spring onions (sliced diagonally) and mix into the noodles. Fry for a final 1 to 2 minutes until the pork is cooked, and turn off the heat. Add 10g of basil leaves and mix, then serve and enjoy!
