A delicious deep fried fish recipe enhanced by a flavour packed sauce that is spicy with a hint of sweet and sour. Very easy to prepare, simple, and totally delicious. As always add more or less chilli to the sauce depending on your preference for spice!

  • 1 Whole Seabass (about 500g of fish after being prepared)
  • Half cup of plain flour
  • 1 tbsp salt
  • 1/4 cup of water
  • 2 tbsp of fish sauce
  • 1 tbsp of tamarind paste
  • 2 garlic cloves
  • 1 chopped shallot
  • 1 tbsp coriander stalks
  • 1 teaspoon of palm sugar
  • 3 fresh chillies
  • 8 whole black pepper balls
  • 2 tbsp cooking oil

Step 1: Add the 2 garlic cloves, 1 tbsp coriander stalks, and 3 fresh chillies to a mortar and pestle and crush everything together

Step 2: Next add the 8 whole black pepper balls, and the chopped shallot and crush into a paste. Set the paste aside for later when we make the sauce.

Step 3: Put the half cup of flour and 1 tbsp of salt into a bowl and mix. Then put your fish in the bowl and coat the sea bass with the flour and salt thoroughly.

Step 4: Heat a saucepan of oil and deep fry the fish until golden brown (should take about 10 to 15 minutes)

Step 5: Place the fish onto some paper towel to absorb excess oil

Step 6: Heat a saucepan with 2 tbsp of oil and mix in/lightly fry the paste we made in our mortar and pestle. then add the 1 teaspoon of palm sugar, 2 tbsp of fish sauce, 1 tbsp of tamarind paste, 1/4 cup of water, and mix everything until dissolved.

Step 7: Allow the sauce to simmer for a couple of minutes, then pour over the sea bass, and serve with rice
