In this recipe we coat bitesized pieces of sea bass in batter and deep fry them, before finally pouring on a homemade sweet and sour sauce that is made with fresh pineapple chunks. You could use another type of fish if you prefer, but sea bass was the best fresh fish available to us at the time.
We really liked the added flavour and texture we got from using fresh pineapple chunks instead of pineapple juice, and the whole dish is very tangy and fresh on the tongue. This dish would go really with rice as there is lots of sauce!

Step 1: First we need to prepare the sweet and sour sauce, so add 1/2 cup of pineapple chunks and 1 tbsp of chopped onion to a food processor and blend together for a few seconds. Then add 1/3 cup of ketchup, 1 tbsp of sriracha sauce, 1 1/2 tbsp of white vinegar, 2 tbsp of sugar, 3/4 tbsp of corn flour and 2 tbsp of soy sauce to the food processor, and blend until you are left with a smooth and lump free sauce.
Step 2: Next we need to make the batter for the fish, so add 1 cup of flour to a mixing bowl, then slowly pour in about 1 cup of water whilst stirring, and keep stirring until the batter is smooth and lump free.
Step 3: Now cut up the sea bass into bitesize pieces, dunk them in the batter, and deep fry them for about 5 minutes until they are golden brown, then set them aside on some paper towel.
Step 4: The last thing we need to do is cook the sauce. Heat about 2 tbsp of cooking oil in a wok on a high heat, then add in 2 cloves of finely chopped garlic and 1 cup of diced onion, and fry them for a minute or two, then add 1 cup of diced bell peppers, 1 cup of pineapple chunks, and the sauce we made earlier, and mix everything together thoroughly. Allow the sauce to cook for a couple of minutes, stirring often, then pour it over the deep fried sea bass pieces, then serve and enjoy!
