A quick and easy dish to prepare made with fresh shrimp or prawns, garlic and pepper. The tastes are simple, but perfectly combined. This recipe takes very little time or effort to prepare, and is a hit amongst all who try it.
Briefly deep frying the shrimp in corn flour gives it a wonderful crispy texture, and the paste is mild enough to enhance the flavour of the shrimp without overpowering it.

Step 1: First we need to make our paste. Add 1 tbsp of finely chopped coriander stalks and 3 chopped garlic cloves to a mortar and pestle, and crush into a paste, then add 1/2 teaspoon of pepper, and mix in with the paste.
Step 2: Now pour 1/4 cup of corn flour onto a plate, and coat your shrimp with the flour. Repeat until all of the shrimp is coated in corn flour.
Step 3: Deep fry the shrimp for about 1 to 2 minutes just until they have a crispy coating.
Step 4: In a separate wok or pan, heat about 2 tbsp of cooking oil on a high heat. Then add the paste that we made earlier to the pan, briefly fry it for a few seconds, then add the shrimp, 2 teaspoons of sugar and 1 1/2 tbsp of fish sauce to the pan and mix and fry for about 1 to 2 minutes, and serve with steamed jasmine rice.
