Fillet is one of our favourite cuts of pork, and this is an easy way to enjoy it.

  • 200g thickly sliced pork fillet
  • 1 tbsp fresh turmeric root
  • 5 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black peppercorn

Cooking instructions

 

Step 1: Start by adding 1 tbsp of fresh turmeric root to a mortar and pestle, and then crush it. Next add 5 cloves of garlic, 1/2 teaspoon of black peppercorn, and 1 teaspoon of salt to the mortar and pestle, and continue crushing everything into a paste.

Step 2: Now add 200g of pork fillet which has been thickly sliced into a mixing bowl, along with the paste from the mortar and pestle. Mix the paste in with the pork, then leave the pork to marinate for at least 30 minutes.

Step 3: Now heat some cooking oil in a pan or wok and fry the marinated pork. The amount of time you need to fry it for will depend on how thick you cut it, but make sure its cooked all the way through, and you want it golden brown on the outside. Whilst frying, scoop out any bits of turmeric and set them aside for use as a topping later.

Step 4: Once the pork is cooked, set it aside, then scoop out any of the remaining marinade from the mixing bowl and fry it for a few seconds. Then use this as a topping for the pork.
