Grilled Duck Curry (Gaeng Phed Ped Yaang)

This curry is a good blend of flavours, with sweetness from the pineapple, spice from the red curry paste, creaminess from the coconut milk, and salt from the fish sauce. In this recipe we have used a grilled duck recipe which we made a video on earlier, so for best results use that recipe for the grilled duck, but you could also use plain grilled duck.

The recipe should make enough for about 1 portion, and is ready in just 10 minutes once you have already made the grilled duck.

Cooking instructions

 

Step 1: Begin by heating 2 teaspoons of cooking oil in a saucepan, then fry 1 1/2 tbsp of red curry paste for about 1 minute. Next add in 1/2 cup of coconut milk, and mix in with the curry paste.

Step 2: Once the coconut milk and curry paste are completely mixed together, add in 1 sliced grilled duck breast. For best results use this grilled duck recipe, but you can just use plain grilled duck.

Step 3: Mix the duck in with the sauce, then add the other 1/2 cup of coconut milk, 1/3 cup of chopped pineapple, 4 cherry tomatoes, 1 tbsp of fish sauce, 1/4 teaspoon of salt, 1/2 teaspoon of sugar and 2 pairs of chopped lime leaves.

Step 4: Stir the curry and cook for about 5 minutes, then serve with some steamed rice and enjoy!
