This spicy vegetable soup recipe is perfect for winter time as it is hot and filing, but also low in calories and very healthy as it is packed with tasty vegetables. Who says that you need to be hungry when dieting? If you are looking to shed the pounds, this is a great meal that will leave you full and satisfied without expanding your waistline! This soup is packed with nutrients and taste, and is considered by Thais to be a great choice when you are under the weather and need a pick me up.
You can also add in any extra vegetables you want to use that you may have left over in your kitchen.

Step 1: The first thing we need to make is the base for the soup. Add the chilli, shrimp paste, shallots, pepper and 2 of the prawns to a food processor and blend for 1-2 minutes until you are left with a thick paste.
Step 2: Add 4 cups of water to a saucepan and boil. Then add the paste that we just made and the chopped butternut squash, mix well, and cook for 5 minutes until the squash begins to soften.
Step 3: Once the squash has begun to soften, add the courgettes and the baby corn, mix well, and allow to cook for 3 minutes.
Step 4: Next add the carrots and green beans, mix well, and cook for 5 minutes
Step 5: Finally add the mushrooms, prawns, and watercress, stir well, and cook for a final 3 minutes
