This spicy vegetable soup recipe is perfect for winter time as it is hot and filing, but also low in calories and very healthy as it is packed with tasty vegetables. This soup is packed with nutrients and taste, and is considered by Thais to be a great choice when you are under the weather and need a pick me up.

1 chilli (Or more if you want it spicier)
- shrimp paste 1 teaspoon of 4 shallots chopped in half 1 teaspoon of pepper 250g cooked prawns or shrimp 1/2 cup of green beans chopped 1/2 cup of carrots sliced (approx 1 large carrot) 1 cup of baby corn chopped 1 cup of butternut squash chopped 1 cup of courgettes cubed 6 white mushrooms sliced 1 cup of watercress

Step 1: The first thing we need to make is the base for the soup. Add the chilli, shrimp paste, shallots, pepper and 2 of the prawns to a food processor and blend for 1-2 minutes until you are left with a thick paste.
Step 2: Add 4 cups of water to a saucepan and boil. Then add the paste that we just made and the chopped butternut squash, mix well, and cook for 5 minutes until the squash begins to soften.
Step 3: Once the squash has begun to soften, add the courgettes and the baby corn, mix well, and allow to cook for 3 minutes.
Step 4: Next add the carrots and green beans, mix well, and cook for 5 minutes
Step 5: Finally add the mushrooms, prawns, and watercress, stir well, and cook for a final 3 minutes
