Step 1: Start by adding 1 clove of garlic, and 1 tbsp of coriander stalks to a mortar and pestle, and crush into a paste.
Step 2: Then add 1 cup of minced chicken, and 1 cup of shrimp to a food processor, and blend together for about 30 seconds or so.
Step 3: Next add 1 tbsp of sesame oil, 1 tbsp of soy sauce, 1/2 teaspoon of meat seasoning powder, 1 tbsp of sugar, 1 tbsp of potato flour, 1/2 teaspoon of salt, 1/2 teaspoon of pepper and the garlic and coriander paste we made in with the chicken and shrimp, and blend for another 30 seconds or so until you are left with a thick paste mixture.
Step 4: Now lay 1 piece of wonton pastry flat on a plate, and add about 1 heaped teaspoon of the paste on to the middle of the pastry. Fold in half from the bottom corner to the top corner so that your dumpling is a triangle shape. Press around the edges to seal the mixture inside the dumpling, and repeat until you have used up all of the paste.
Step 5: Finally, deep fry the dumplings until they are golden brown, turning them over occasionally. We like ours extra crispy however you can fry them to your liking. Once they are ready, drain them off, and then serve with some sweet chilli dipping sauce, or whatever dip you prefer.
