Chilli fish sauce always makes food taste better, however by adding grated green mango and lime juice, you end up with an even tastier sauce that goes really well with fish. In this recipe we have served the sauce with a fried sea bass, but you can use whatever type of fish you prefer.

The sauce is a great blend of hot, sweet, salty and sour, and is a great way to liven up an otherwise bland tasting dish. The key to getting this sauce right is to only use green mango, so make sure you buy that before getting started!

  • 3 tbsp fish sauce
  • 2 tbsp sugar
  • 4 finely chopped red bird eye chillies
  • 3 sliced shallots
  • 1/4 cup grated green mango
  • 1 tbsp lime juice
  • garnish with coriander

Step 1: Add 3 tbsp of fish sauce, 1 tbsp of lime juice, and 2 tbsp of sugar to a mixing bowl, and stir until the sugar dissolves in the sauce.

Step 2: Now add 4 finely chopped red bird eye chillies, 3 sliced shallots, and about 1/4 cup of grated green mango to the bowl, while you continue to stir. Once everything is thoroughly mixed, serve with the fish of your choice!
