Its the cut of pork and marinate that really makes this recipe. Pork shoulder blade is the perfect sweet spot as it is not too fatty and not too dry, and when grilled properly it is slightly crunchy on the outside, but succulent on the inside. It did require a trip to the butchers to find, however it is well worth it.
The marinate is nothing complex, but gives the meat an excellent savoury, yet slightly sweet and creamy flavour, and goes well with our choice of pork. We recommend marinading for at least 1 hour, but even longer would be ideal. Give this porky recipe a go and let me know what you think! Step 1: Place 300g of pork shoulder blade into a mixing bowl, and add 3 tbsp of soy sauce. 2 tbsp of oyster sauce, 3 tbsp of fresh milk, 1 1/2 tbsp of sugar, 1/2 teaspoon of salt and 1 teaspoon of pepper. Mix everything together and rub the marinate into the pork, and leave to marinade for at least 1 hour. (The longer the better)
Step 2: Now grill the pork on a medium heat for about 15 minutes on each side depending on how thick your cut of pork is. Make sure that the pork is browned on the outside.
Step 3: Finally, thinly slice the pork, and pair with a good meat dipping sauce. You can check out our isaan style meat dipping sauce recipe here. This dish is perfect as a quick snack, or as a meal served with sticky rice!
