We live near the coast so when we make seafood dishes we always try to use what is fresh and easily available. Cherry really likes mussels so she decided to make a simple spicy stir fry using fresh mussels. We made this after work on a weekday evening, so wanted it as quick and simple as possible while still being tasty. The recipe was ready from scratch in under 15 minutes, and it would have been even faster however it took a few minutes to thoroughly wash the mussels, as its important that there is no dirt on them as that will ruin the stir fry!
You could substitute in clams or any other shellfish if you prefer, and of course adjust the number of chillies used depending on your preference for spice. This was originally supposed to serve 2 people, but it tasted so good that cherry ate it all, so double the ingredients if you are making it for 2!

Cooking instructions
Step 1: Heat 2 tbsp of cooking oil in a wok on a high heat, then add 2 cloves of finely chopped garlic, stir fry for about 20 seconds or so, then add 450g of mussels. Stir fry the mussels for about 1 minute.
Step 2: Then add 1/2 cup of sliced bell peppers and 2 sliced bird eye chillies, stir fry for another minute, then add in 2 tbsp of chilli paste, 1 teaspoon of sugar, and 1 tbsp of fish sauce, then stir fry until the chilli paste is dissolved in with the sauce.
Step 3: Finally, add in 1/2 cup of basil, turn off the heat, stir thoroughly, then serve and enjoy with some steamed jasmine rice – and make sure you pour on all of the sauce!
