Bored of plain old fried rice? Liven up your meal with this pineapple fried rice recipe. A delicious and sweet way to enjoy fried rice, give our recipe a try and let us know what you think! We have opted to serve the meal in the pineapple skin just for a bit of extra flair, however this is not necessary, feel free to serve on a plate if you want!

  • 2 cups of steamed jasmine rice
  • 100g chopped ham
  • 1 whole pineapple
  • 450g sliced chicken
  • 1 clove of peeled garlic
  • Half a peeled sliced carrot
  • Half a diced onion
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • a dash of ground pepper (optional)
  • 2 tablespoons of soy sauce
  • 2 tablespoons of cooking oil for wok
  • 2 eggs
  • Half a chopped spring onion
  • Coriander for garnishing

Cooking instructions

 

Step 1: Heat 1 tablespoon of oil in a wok on a high heat

Step 2: Fry the onions, carrots, and garlic until soft

Step 3: Add the chicken and fry until medium cooked (until the chicken begins to turn white)

Step 4: Add the ham and eggs, and scramble together

Step 5: Add the pre steamed rice jasmine rice and chopped pineapple, the soy sauce, pepper, sugar and salt and stir

Step 6: Stir fry until chicken is completely cooked, then add the spring onions and cook for 2 more minutes.

Serve and enjoy! Often served with a bowl of fish sauce with chopped chilli for extra flavour.
You can also add any other vegetables you like, or use another meat or seafood instead of chicken.
