A super simple snack made with juicy fresh prawns and spring roll pastry. Great as a party food, or just when you want something quick and tasty. We marinated the shrimp in a garlic, pepper and coriander paste beforehand, but you could experiment with different herbs and spices depending on your own preference.
For best results use fresh oil for the deep frying, and fresh large prawns.

Step 1: Take 4 spring roll pastry sheets, and cut into quarters, leaving you with 16 pieces.
Step 2: Add 3/4 tbsp of coriander stalks and 2 small cloves of garlic to a mortar and pestle, and crush into a paste.
Step 3: Now straighten out the 16 peeled prawns by using the blunt side of a knife to make a couple of small cuts in the underside of the prawn as cherry is showing in the video. Once thats done, place the prawns into a mixing bowl, and add the paste we just made, along with 1 1/2 tbsp of soy sauce and 1 1/2 teaspoons of ground pepper, and mix together, and leave to marinate for about 10 minutes.
Step 4: Now roll the pastry as demonstrated by Cherry in the video, to seal them you just need to mix a bit of all purpose flour with some water to create a sticky paste.
Step 5: Once all of the prawns are rolled, deep fry them for about 5 minutes until they are a light brown colour, then drain them from the oil and place on some paper towel to absorb any excess oil. Then serve and enjoy with the dip of your choice!
