This is a spicy prawn stir fry made with red curry paste, with a hint of creaminess and sweetness from the evaporated milk. It is really quick to make, ready from scratch in under 15 minutes, and this recipe is enough for 1 portion so adjust as needed.

Step 1: Begin by heating 3 tbsp of oil in a wok. Once hot, add in 3 tbsp of red curry paste, and stir fry the paste in the oil for about 30 seconds.

Step 2: Next add in 1/2 cup of evaporated milk, 1 tbsp of soy sauce, 1 tbsp of fish sauce, and 1 tbsp of sugar.

Step 3: Mix in until you have a lump free sauce, then add in 1/2 cup of sliced red peppers, 1/4 cup of sliced green beans, 1 cup of peeled prawns, 1 tbsp of sliced lime leaves, and 1 teaspoon of ground pepper.

Step 4: Stir fry for a few minutes until the prawns are cooked, then switch off the heat, add in 1/4 cup of basil leaves, mix one last time then serve with some steamed rice.
