This is a very mild, savoury stir fry that is easy, simple, and tasty. The ingredients used are easy to find, and it is one of our favourite ways to eat shiitake mushrooms. This is a great recipe to try when you want something healthy and delicious but are short on time.

Step 1: First we need to make the stir fry sauce, so add 1 tbsp of gravy granules to a bowl along with about 2 tbsp of hot water, and stir. Then add in 1 tbsp of oyster sauce, 1 teaspoon of fish sauce, and 1 tbsp of soy sauce. Then just stir until the sauce is lump free.
Step 2: Now heat 2 1/2 tbsp of cooking oil in a wok on a high heat, and briefly stir fry 1 cup of peeled shrimp for about 20 seconds. Then add in 1/4 cup of sliced carrots, and stir fry for about half a minute.
Step 3: Next add in 1 cup of quartered shiitake mushrooms, stir in, and follow by adding in the stir fry sauce that we prepared earlier. Stir fry for about another minute, then add in about 1 tbsp of water just to prevent the stir fry drying out too much. Mix the water in, then add 3 spring onions which have been sliced diagonally.
Step 4: Stir fry for a final 30 seconds, then serve and enjoy!
