This is a shrimp paste fried rice recipe with a twist – the fried rice is served wrapped inside an omelette, and is accompanied with mackerel and a shrimp paste dipping sauce. If you like the flavour of shrimp paste then this dish is for you, and its actually quite simple to make, and should be ready in around 30 minutes.
The recipe is a great way to use up leftover steamed rice, and it will make enough for 1 serving so adjust as needed.

Step 1: Begin by adding 2 bird eye chillies and 2 cloves of garlic to a mortar and pestle, and crush into a paste. Then add in 1/2 tbsp of shrimp paste, 3/4 tbsp of fish sauce, 1/2 tbsp of dried baby shrimp, 3/4 tbsp of sugar, and 1 1/2 tbsp of lime juice, and mix everything together.
Step 2: Next add 2 eggs to a bowl along with 1/2 tbsp of soy sauce, and then beat the egg. Then coat a wok with some cooking oil, and use the egg to make a thin omelette. Once the omelette is golden brown, set aside for use later on.
Step 3: Next fry 1 small mackerel or any fish of your choice, then set aside. Then heat about 1/2 tbsp of cooking oil in a wok, and when hot add in 1 cup of leftover steamed jasmine rice and 1 tbsp of chopped green beans. Stir fry for about 2 minutes, then add in 2 tbsp of the paste we made in the mortar and pestle earlier on, and mix in with the rice.
Step 4: Stir fry everything for a final couple of minutes, then wrap the rice inside the omelette, and serve with the fried mackerel and the rest of the shrimp paste dip that we made earlier in the mortar and pestle.
