This is a dish that has a great blend of different textures and flavours. It is centred around rice which is fried with shrimp paste (kapi) and accompanied by a variety of different toppings and garnishes which can include omelette strips, cucumber, shallots, and green beans.
A variety of flavours are present – salty from the shrimp paste, sweet from the sweet pork belly, spicy from the chillies, and a fresh and crunchy texture from the vegetables. What we have listed is just a guideline so you can always experiment with your own additions!

Step 1: First beat 2 eggs, then heat 2 tbsp of cooking oil in a wok on a high heat. Make sure the wok is coated in oil, then pour in the beaten eggs. Swirl the egg around the pan so that you make a thin omelette. Cook the omelette on both sides, and when done, thinly slice it into strips and set aside.
Step 2: Now add another 2 tbsp of cooking oil to the wok, and fry 1 tbsp of finely chopped garlic for about 20 seconds. Then add in 2 tbsp of shrimp paste, and mix it with the garlic. Finally add in 3 cups of steamed rice which has been left to cool for a few hours, and mix with the garlic and shrimp paste. Keep mixing for a few minutes until the shrimp paste has completely mixed with the rice. By this time the the rice will be ready to serve. Keep in mind that the final colour of the fried rice may be different to ours depending on what brand of shrimp paste you use.
Step 3: So once the fried rice is done, serve with some sliced cucumber, sliced shallots, chopped green beans, the omelette strips we made earlier, some sweet pork belly, and some chopped bird eye chillies.
You can have as much or as little of each garnish as you wish! And thats all there is to it – a great way to eat sweet pork belly with fresh and balanced flavours!
