This dish is a hot and sour curry soup, made with the seafood and mixed vegetables of your choice. We have used shrimp and tuna which we found works really well with the flavours of the soup.
Although there are quite a few ingredients needed to make this curry, the cooking process is very straightforward, and the meal is ready in under 15 minutes.

Step 1: First we need to make the curry paste. Cut 2 large shallots in half, and add them to a deep mortar and pestle along with 4 krachai roots, 3 red bird eye chillies and 5 large dried chillies. Crush all of the ingredients into a paste, then add 1/2 tbsp of shrimp paste, and mix in with the paste.
Step 2: Now bring 1 litre of water to the boil, and spoon in the curry paste we made, stirring thoroughly. Follow by adding 1 can of tuna and 1/4 cup of tamarind sauce, and stir until everything is mixed together thoroughly.
Step 3: Now add 1 cup of chopped cauliflower, 1 cup chopped white cabbage, and 1 cup of chopped green beans. You can also use other vegetables if you wish.
Step 4: Let the vegetables simmer in the curry for about 2 minutes, then add 2 tbsp of palm sugar, 2 tbsp of lime juice, 2 tbsp of fish sauce and 2 tbsp of salt. Give the curry a stir, and let it simmer for another 3 minutes or so until the vegetables are nearly cooked.
Step 5: Finally, add 200g of shrimp and gently stir in the curry until the shrimp turn pink, then serve and enjoy. We had ours with some steamed rice and an omelette!
