A healthy and flavour packed spicy and sour fish salad that is one of the easier recipes we have made. Simply grilled a boneless mackerel fillet, and top with this homemade dressing, and you are are ready to eat!
Serve with jasmine rice or just on its own, this recipe is a great way to eat healthier without sacrificing flavour. We have used mackerel but we think this would also work really well with tuna or salmon!
Step 1: Grill 450g of boneless mackerel fillet for about 10 minutes on each side on a medium low heat.
Step 2: Whilst the fish is grilling, add 3 red bird eye chillies, 1 tbsp of coriander stalks and 1 clove of garlic to a mortar and pestle and crush into a paste.
Step 3: Now add 1 tbsp of palm sugar, 1 tbsp of sugar, 1/4 cup of fish sauce, and 1/2 cup lime juice to a bowl, and mix thoroughly until the sugar has dissolved in the dressing. Then add in the paste we made earlier in the mortar and pestle, 1/4 cup of chopped lemongrass, 1/4 cup of sliced shallots, 1 chopped spring onion, 3 dried chillies, and 3 cloves of finely chopped garlic. Give everything a stir, then add 15 mint leaves and 2 tbsp of roasted peanuts, mix – and the dressing is ready.
Step 4: Now place a bed of 1/2 cup of grated carrot on to a plate. Once the fish has been grilled, lay the fish on top of the bed of carrot, and pour the dressing over the fish, then serve and enjoy!
