Spicy Oyster Mushroom Thai Salad (Laab Hed)

This is a mushroom version of the traditional thai laab salad recipe in which we are using oyster mushrooms as the main ingredient. This salad is spicy and sour, and slightly crunchy in texture thanks to the roasted crushed rice. It is a really quick and easy recipe that should be ready in under 5 minutes, and it is very low in calories, yet tastes great!

You can serve this dish on its own as a light salad, or with some sticky rice to bulk it out. This is a great way to serve oyster mushrooms!

Cooking instructions


Step 1: Bring a pot of water to the boil, then add in 160g of sliced oyster mushrooms, and let them boil for about 10 to 20 seconds as you just want to soften them up a bit, and not make them too soggy.

Step 2: Then drain the mushrooms and place into a mixing bowl, along with 2 chopped spring onions, 1 sliced shallot, 2 branches of mint leaf, just tearing the leaves from the branch first, 1 tbsp of crushed roasted rice, 1 teaspoon of crushed dried chillies, 1 tbsp of lime juice and 1 tbsp of fish sauce.

Step 3: Toss the salad until everything is mixed together, then serve and enjoy!
