A spicy and tasty way to enjoy pork belly, this stir fry recipe is packed with flavour as all of the ingredients are fried in the pork belly fat without using cooking oil. It is important to fry with a hot wok so that the pork belly is crispy and not too chewy.
You can adjust the number of chillies depending on your preference for heat, and the recipe also works well if you use other cuts of pork, or even other meats.
Step 1: Start by heating a wok on a high heat until it is very hot. Then add 250g of thinly sliced pork belly and fry until it begins to brown. If you like your pork belly really crispy, fry for longer.
Step 2: Now add 1 1/2 tbsp of red curry paste, 1 tbsp of chilli paste, 1 1/2 tbsp of fish sauce, 1/2 tbsp of palm sugar, 1 clove of finely chopped garlic and 2 sliced red bird eye chillies to the wok, and stir fry for a further 1 minute.
Step 3: Then add 1 cup of long green beans which have been cut into roughly 1 inch pieces, 1/4 cup of sliced yellow bell peppers, 1/4 cup of sliced red bell peppers, and stir fry for about 2 minutes.
Step 4: Finally add 1/2 teaspoon of ground pepper and stir fry for a final minute or two until the pork belly and vegetables are cooked to your liking, then serve and enjoy with some steamed jasmine rice.
