If you are looking for a light and tasty salad recipe, then look no further. In this recipe we take some vietnamese sausage, and mix with a fresh and light salad. This is the same sausage that we used in our previous summer rolls recipe.
The recipe is very quick to make and should be ready in under 15 minutes from scratch, and will make enough for 1 portion, so adjust as needed.

Step 1: Begin by adding 1 tbsp of lime juice, 1 1/2 tbsp of fish sauce, and 1 teaspoon of sugar to a mixing bowl, then mix thoroughly.
Step 2: Next slice 1/4 of an onion, 1 tomato, and then chop 2 spring onions into roughly 1 inch pieces.
Step 3: Now bring a pot of water to the boil, then add in 200g of the sliced vietnamese pork sausage. The type we are using is on screen now, you should be able to find it most asian grocery stores. It is already cooked, so you only need to heat it up for a few minutes in the boiling water.
Step 4: So once the sausage is cooked, drain it and then add to the mixing bowl along with all of the sliced vegetables, 1/4 cup of celery leaves, 1 teaspoon of chilli flakes and 1 cup of chopped iceberg lettuce. Mix everything together, and then you are ready to serve.
