This is a spicy and fresh tasting stir fry recipe that is packed with fresh herbs and spices. We have used salmon cutlets which pairs really well with the spicy paste we have made, but you could experiment with other types of fish.
If you don’t have a mortar and pestle, you could just use a food processor, and the recipe itself should be ready in under 15 minutes including preparation time, so its a tasty meal you can make even if you are short on time!

Step 1: First we need to make the spicy paste. Add 3 red bird eye chillies, 3 cloves of garlic, 1 shallot, and 1 lemongrass to a mortar and pestle, and crush for a few minutes until everything is broken down. Then add 3 pairs of kaffir lime leaves and 1/4 teaspoon of shrimp paste, and continue crushing for a couple more minutes until everything is mixed together.
Step 2: Next heat 3 tbsp of cooking oil in a wok on a high heat. Once the wok is hot add the paste we made earlier, and stir fry for about 30 seconds.
Step 3: Now add 200g of salmon cutlets, and stir fry them in the paste for about 2 minutes, being careful not to break them up!
Step 4: Next add 3 sliced krachai roots, 1 tbsp of young peppercorn, 2 large sliced red chillies, 1 tbsp of fish sauce and 3/4 teaspoon of sugar, then stir fry everything for about 5 minutes until the salmon cutlets are cooked and browned off. Finally turn off the heat, add 1/4 cup basil, stir everything together, then serve with some steamed jasmine rice.
