This hot and spicy southern Thai style chilli paste stir fry is coupled with aromatic and pungent sa-dtor beans to make a dish that is packed with flavour and character. Although the list of ingredients may seem long, this is one stir fry that you absolutely have to try. Should be served with jasmine rice and a fried egg.
As usual we have made our own chilli paste – we used 5 dried and 8 fresh chillies to make the dish extremely spicy however you may wish to use less depending on your preference. For optional sourness, you can also add 1 1/2 tablespoons of lime juice, however we didn’t for this meal.

Step 1: First we need to prepare the sa-dtor beans. Use a knife to cut through each bean pod, to remove the bean inside. You only want the light green beans, not the skin. Do this for the entire bean pod.
Step 2: Now we need to prepare the stir fry paste. Cut the lemongrass into small pieces and place in a blender/food mixer. Then add the 2 shallots – you should half them or quarter them first for easier processing. Also add the 3 slices of galanga, 3 cloves of garlic, 5 whole balls of pepper, 5 dried chillies, and 8 fresh chillies. Blend everything for about 20 seconds.
Step 3: Now add the 1 1/2 tablespoons of shrimp paste and 1/4 teaspoon of turmeric. Blend for another 20 seconds or so until you have a paste that looks like this.
Step 4: Heat a tablespoon of cooking oil, then add the paste that we just made into the wok. Stir fry the paste for about 30 seconds, before adding the 250g of unsmoked bacon, 250g of peeled prawns, and the sa-tdor beans we peeled earlier.
Step 5: Stir fry for about 5 minutes until the prawns and bacon are almost cooked, then add the 1 1/2 tablespoons of sugar and the 5 finely chopped lime leaves. Stir fry for a final 2 minutes until the ingredients are cooked. and serve hot.
