This is a healthy and light salad recipe that is great for lunch or as a light evening meal. It is quick and simple to prepare and is a great meal to take to work for lunch instead of boring sandwiches! It consists of a shrimp and broccoli salad mixed with a spicy and sour minced pork dressing. Its tasty and filling, but low on calories.
We have used minced pork in this recipe but you could also use minced chicken if you prefer. This recipe is a great way to use up broccoli stalks which people often through away, but once peeled and cooked are actually very soft, tasty, and good for you!

Cooking instructions
Step 1: Bring a pot of of water to the boil, then add in 1 cup of sliced and peeled broccoli stalks. Boil the broccoli for a couple of minutes or so, depending on how soft you like them, then scoop them out and set aside.
Step 2: Now add 1 cup of peeled shrimp the pot, and boil until they are cooked, then scoop them out and set aside with the broccoli.
Step 3: Next add 100g of minced pork to a saucepan, along with 1/4 cup of water. Boil the pork in the water until it is cooked, then set aside in a bowl or jug.
Step 4: Then add 1 tbsp of fish sauce, 2 tbsp of lime juice, 1 tbsp of sugar, and 3 chopped bird eye chillies to the jug with the minced pork, and mix together thoroughly.
Step 5: Finally add 1/2 cup of halved cherry tomatoes, 1/2 cup of celery leaves and 1/2 cup of sliced shallots to the bowl of shrimp and broccoli, then pour over the minced pork dressing we just made. Toss the salad together, and then serve and enjoy!
