  • 2 large squid tubes
  • 3 chopped red bird eye chillies
  • 3 cloves of finely chopped garlic
  • 4 tbsp lime juice
  • 3 tbsp fish sauce
  • 1 teaspoon sugar
  • 1/4 cup celery leaves
  • lime for garnishing

Step 1: Begin by steaming 2 sliced squid tubes for 10 minutes on a high heat.

Step 2: Whilst the squid is steaming, we can make our sauce. Add 4 tbsp of lime juice, 3 tbsp of fish sauce, 1 teaspoon of sugar, 3 cloves of finely chopped garlic and 3 chopped red bird eye chillies, or as many as you want. Give the sauce a good stir, then add 1/4 cup of celery leaves, mix in, and the sauce is ready.

Step 3: Once the squid has finished steaming, lay it out on a plate, then pour the sauce over the squid, garnish with some fresh lime, then serve and enjoy!
