A simple yet tasty way to enjoy butternut squash using only 5 ingredients. The squash is boiled and then briefly stir fried with eggs and garlic so that it soft but not mushy, and lightly seasoned to bring out the flavour.
Although simple, this recipe is actually quite filling and great on a cold winters night! We ate it on its own, but you could pair with rice if you want.

Step 1: Begin by boiling 2 1/2 cups of peeled and diced butternut squash for about 10 minutes until they have softened. After 10 minutes drain the squash and set aside.
Step 2: Now heat about 2 tbsp of cooking oil on a high heat, and fry 3 cloves of finely chopped garlic for about 20 seconds, then lightly scramble 2 eggs for another 20 seconds.
Step 3: Now pour in the butternut squash, and mix with the egg until the egg sticks to the cubes of squash.
Step 4: Finally season with 1/2 tbsp of sugar and 1 1/2 tbsp of fish sauce, stir fry for a final 2 minutes, and then serve!
