A healthy, simple, yet flavour packed courgette stir fry recipe that is very mild, savoury and rich. It is best eaten with some steamed rice to absorb the sauce, however if you want to eat it on its own you can, just leave out the soy sauce or it will be too rich and salty.
We have used courgettes instead of luffa as we can’t buy that where we live, however if you can, then you can use whichever you prefer.

Step 1: Begin by heating 2 tbsp of cooking oil in a wok on a high heat, then add in 2 cloves of finely chopped garlic and fry for about 15 seconds. Then add in 1 peeled and diced courgette, and stir fry with the garlic for about 1 minute.
Step 2: Now push the courgettes to one side of the wok, and add 2 eggs to the clear side on the wok. Scramble the eggs for a few seconds then mix them with the courgettes.
Step 3: Next add 1/2 tbsp of sugar, 1 tbsp of soy sauce, 1/2 tbsp of oyster sauce, and 2 tbsp of water to the wok. Stir fry everything for a final 2 to 3 minutes until the courgettes have softened and absorbed the flavour of the sauce. Then serve and enjoy with some steamed rice.
