This is a very low calorie and healthy stir fry recipe. The main ingredient is glass noodles which are made form mung bean flour and are a healthy source of carbs. They are ideal for soaking up flavours, so taste great.
We have used chinese cabbage, tomatoes, and carrots in this recipe, but you could experiment with other vegetables if you prefer. The final dish only takes around 10 minutes to make once the noodles have finished soaking, so its a great recipe to make when you are short on time.

Cooking instructions
Step 1: Start by soaking 75g of dried glass noodles in some cool water for about 20 minutes.
Step 2: After 20 minutes, heat 2 tbsp of cooking oil in a wok on a high heat, then fry 1 clove of finely chopped garlic for about 20 seconds or so. Then lightly scramble 2 eggs in the wok, and add 1/2 cup of sliced chinese cabbage, 1/4 cup of sliced carrot, 1/2 cup of chopped tomatoes, and then drain the glass noodles and add them to the wok. Throughly mix the ingredients together and stir fry for about 2 to 3 minutes.
Step 3: Now its time to season the noodles, so add 1 tbsp of fish sauce, 1/2 tbsp of sugar and 1 tbsp of oyster sauce. Mix in with the noodles, for about 1 minute, then add 1 sliced spring onion, stir fry for a final minute then serve and enjoy!
You could also season further with whatever condiments and garnishes you like, and it is best eaten hot and fresh!
