Stir Fried Instant Drunken Noodles (Mama Pad Kee Mao)

This is a quick version of drunken noodles for all you instant noodle lovers out there. We have previously made a more traditional drunken noodles recipe which I will link to on screen now, but in this recipe we are using instant noodles and shrimp to make a quick and easy spicy noodle stir fry that is ready in under 15 minutes.

This recipe will make enough for one portion, so adjust as needed.

  • 1 packet instant noodles
  • 1 clove garlic
  • 2 bird eye chillies
  • 100g peeled shrimp
  • 50g baby corn
  • 2 leaves sweetheart cabbage (or 1 Chinese broccoli)
  • 2 red chillies
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 teaspoon sugar
  • 1/2 cup basil leaves

Step 1: First soak 1 pack of instant noodles in boiling hot water for about 3 minutes.

Step 2: Next slice either 2 leaves of sweetheart cabbage or 1 Chinese broccoli, then diagonally slice 50g of baby corn and 2 red chillies, and finely chop 1 clove of garlic and 2 bird eye chillies.

Step 3: Now heat 2 tbsp of cooking oil in a wok, and when hot add in all of the vegetables we just prepared. Stir fry everything for about 1 minute, then add in 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 100g of peeled shrimp, and 1 teaspoon of sugar.

Step 4: Stir fry until the shrimp is almost cooked, then add in the drained instant noodles, stir fry for a final minute or so until the shrimp is cooked, then turn off the heat, add in 1/2 cup of basil leaves, mix one last time then serve and enjoy!
