This is one Thai dessert that anyone should be able to cook, regardless of cooking ability. It is so simple, yet tastes so good, and is a perfect reminder that sometimes when cooking it is best to let the ingredients speak for themselves rather than overcomplicating things. Cooking instructions
Step 1: First we need to make the syrup. Bring half a litre of water to the boil in a saucepan, then add 1 cup of sugar. Stir until and heat until the sugar has completely dissolved into the water.
Step 2: Then add 50g of thinly sliced ginger, and 1 large sweet potato which has been peeled and diced. (about 500g)
Step 3: Let the potato and ginger cook in the syrup on a high heat for about 10 to 15 minutes until the sweet potato is soft. The exact time will depend on how thick your potato cubes are. Once the potato is cooked. spoon the potato and ginger into a serving bowl along with a generous helping of the syrup, and enjoy! Remember the ginger is only in there to add flavour, so you might not want to eat the ginger pieces!
