Thai Green Curry Recipe (Gaeng Keow Wan Gai)

Probably the most well known Thai dish – green curry is easy to prepare, delicious, and uses ingredients that you should be able to find without too much difficulty.

The final dish is packed with flavour, and ready in under 15 minutes! In this recipe we have used chicken breast but you could also use any other meat, fish or tofu that you want!

Step 1: Add 1/4 cup of coconut milk to a wok and heat on a medium heat until the coconut milk begins to bubble, then add 1/4 cup of green curry paste. Fry the green curry paste in the coconut milk for about 3 minutes, stirring often.

Step 2: Next add 350g of sliced chicken, and fry it in the paste for about 2 minutes. Then add 3 tbsp of fish sauce, 2 tbsp of sugar, give everything a good stir, then add 1/4 cup of baby eggplant, 1 cup of eggplant, 2 sliced red chillies and 4 pairs of lime leaves that have been torn into pieces to release their flavour.

Step 3: Stir thoroughly, then add 1 cup of coconut milk, and 1/2 cup of water. Stir in and cook for a final 4 to 5 minutes until the chicken and vegetables are cooked, then sprinkle on 1/4 cup of holy basil, stir in, and serve and enjoy!
