This spicy dipping sauce goes great with meat, particularly grilled pork and chicken. Based on an Isaan region recipe, its sure to fire up your tastebuds! This is a really versatile fiery dip that is great for livening up left over meats and making snacks and meals far more interesting!
You will need to use roasted rice for this recipe. To make this you simply need to fry rice in a pan without oil, until it is golden brown, then crush in a food blender or mortar and pestle – simple as that!

Step 1: Add the 2 tbsp of lime juice, 1 1/2 tbsp of fish sauce and 2 teaspoons of palm sugar to a small bowl and stir thoroughly with a spoon until the palm sugar is mixed in.
Step 2: When the sugar has been thoroughly mixed, add the 1/2 tbsp of chilli flakes, 1 tbsp of roasted rice, and the 2 chopped coriander stalks, and stir thoroughly. (To make roasted rice simply add uncooked rice to a sauce pan and fry on a high heat without oil until the rice is golden brown. Then crush in a food processor for about 30 seconds.)
Step 3: Serve with your chosen meat – goes particularly well with grilled pork and grilled chicken.
