This recipes consists of tuna mixed in a spicy and sour crunchy dressing, that is then wrapped in butterhead lettuce leaves. It’s really healthy and low in calories, and is perfect as a light lunch and ideal for when you are looking for an alternative to boring sandwiches, or even just trying to cut out carbs from your diet.
It is very easy to make, and uses only a few easy to find, low cost ingredients.

Cooking instructions
Step 1: Begin by draining 1 can of tuna in spring water, then adding the tuna to a saucepan. Heat on a low heat and mix with 2 tbsp of water until the tuna is hot. Don’t use tuna in brine as it will be too salty. Whilst heating break down the chunks somewhat.
Step 2: Now pour the heated tuna into a mixing bowl, along with 1 tbsp of fish sauce, 1 tbsp of lime juice, 1 tbsp of roasted crushed rice, 1 tbsp of chilli flakes, 1 sliced shallot and 1 tbsp of chopped spring onion. Mix everything together thoroughly, then add in 1/4 cup of mint leaves. Stir one final time, then pair with some butterhead lettuce leaves.
Step 3: To serve, simply wrap some of the tuna mixture in a butterhead leaf, and eat!
