Today we have a quick recipe to show you how to make this versatile and spicy northern Thai green chilli dip. This recipe is commonly used by Thais as a dip for pork crackling, however it works great as an all purpose dip for snacks and meals. If you are feeling hungry and want a healthy snack, slice up some of your favourite vegetables and dip them in this spicy chilli dip for a snack that’s low in calorie, but definitely not low in taste!
We have used 7 green chillies in this recipe, which you can adjust to suit your own tastes, however this dip is meant to be spicy, and if you use too few chillies it will lose a lot of its character.

Step 1: The first thing we need to do is peel the garlic cloves, and grill the chillies, garlic, and shallots on a low heat for about 10 minutes. We are using a low heat as we don’t want to burn them or dry them out too much, but we want them to cook all the way through. We used skewers to make turning them on the grill easier.
Step 2: Place all the vegetables into a mortar and pestle, and smash everything thoroughly for about 5 minutes until the vegetables are squashed into a thick paste.
Step 3: Now add the 1 teaspoon of salt, and continue smashing until the salt is thoroughly mixed in, and you should have a thick paste that looks like this.
Step 4: Now you are ready to serve, we have ours with some sliced vegetables, which worked really well as a light and tasty snack, but you can use it for anything you want as a spicy healthy dip.
