This is a quick and easy stir fry recipe using red curry paste and coconut milk. Its creamy, with a bit of heat from the paste and peppercorn, and you can of course make it spicier by using more red curry paste.
The flavours are fresh and simple, and its ready in under 10 minutes. This recipe is great for a weekday meal when you are short on time but still want something fresh and tasty.

Cooking instructions
Step 1: Heat 2 tbsp of cooking oil in a wok on a high heat. When hot, add 1 tbsp of red curry paste, and stir fry it for about 1 minute.
Step 2: Now add in 450g of sliced pork and 1 cup of chopped green beans, and stir fry until the pork is half cooked. Then add in 1 cup of coconut milk, and stir fry for about 1 minute.
Step 3: Next add in 20g of fresh young peppercorn, and tear up 5 pairs of kaffir lime leaves, and add them to the wok.
Step 4: Continue stir frying for another 30 seconds or so, then season with 1/2 tbsp of sugar, 1/2 teaspoon of salt, and 1 tbsp of fish sauce. Mix everything together and let everything cook for a final couple of minutes until the pork is completely cooked, then serve and enjoy with some steamed jasmine rice.
