Rice soup works great at any time of the day, however it is especially good for breakfast, or when you are feeling under the weather. We are using shrimp in this recipe, however you could just make rice soup on its own, or substitute the shrimp with pork or chicken.
This recipe is a great way to use up left over rice, and you should ideally use steamed rice that has been left to cool and is at least 1 day old.
The flavour of this dish is simple and mild, and its very filling and satisfying!

Cooking instructions
Step 1: Start by heating 2 tbsp of cooking oil in a saucepan until hot, the add 2 tbsp of finely chopped garlic and fry until golden brown, then remove about half of the garlic and oil for use as garnishing later.
Step 2: Now add about 2 cups of water to the saucepan, along with 2 tbsp of fish sauce, 1 tbsp of soy sauce, and 1 cup of celery leaves. and 1 teaspoon of preserved radish. Give everything a stir, and leave until the soup begins to boil.
Step 3: Once the soup is boiling, add about 200g of steamed rice that has been left to cool, and mix it into the soup.
Step 4: Once the soup starts to simmer again, add 200g of shrimp, and simmer for about 2-3 minutes until the shrimp is pink and cooked.
Step 5: Garnish with 1/2 teaspoon of pepper, some ginger, spring onion, fried garlic oil, and coriander, then serve and enjoy!
