We have used 10 chillies in this recipe but you can increase or decrease this number depending on your own preference – but remember this sauce is meant to be fiery!

Step 1: Add the 5 cloves of garlic, 10 chillies, and 2 tbsp of coriander to a food processor and blend for about 1 minute until broken down.
Step 2: Now add the 3/4 teaspoon of salt, 1 tbsp of oyster sauce, 2 tbsp of fish sauce, 1/2 cup of lime juice, and 3 tbsp of sugar to the food processor and blend for a final 20 seconds.
Step 3: Serve with your chosen seafood dish and enjoy! Goes particularly well with grilled seafood.
