A spicy Isaan style salad made with liver, mint, and a salty, spicy, and sour dressing. This salad is quick and easy to make, and the ingredients used are low cost. It’s healthy but very tasty and is a great way to serve liver!
This recipe will serve 1 to 2 people depending on whether you bulk it out with rice and fresh vegetables.

Step 1: Begin by washing then slicing 300g of pork liver.
Step 2: Now bring a pot of water to the boil, and once it is hot and bubbling, add in the sliced pork liver. Let the liver cook in the water for about 3 to 5 minutes until its cooked all the way through. The exact time will depend on how thinly you sliced it, but make sure you avoid overcooking the liver.
Step 3: Once the liver is cooked, drain and add to a mixing bowl along with 1 teaspoon of chilli flakes, 1 tbsp of crushed roasted rice, 1 tbsp of fish sauce and 2 tbsp of lime juice. Mix everything together thoroughly, then add in 1 sliced large shallot, 1 chopped spring onion and 1/2 cup of mint leaves. Mix one final time then serve with fresh vegetables, steamed rice, and enjoy!
