This recipe is a super easy spicy salad recipe that is made with either canned sardines, pilchards or mackerel. Be sure to get the ones that come in the tomato sauce as this balances the flavour of the salad. You might think that using canned fish doesn’t sound too good, but it really works well in this recipe!
We have had a lot of requests from subscribers for low calories dishes that are easy to make, and this definitely meets those requirements. This salad took us less than 10 minutes to make, including preparing all of the ingredients, and there is no frying involved! 🙂

Cooking instructions
Step 1: After you have prepared all of the ingredients, add 1 can of sardines (or pilchards or even mackerel) in tomato sauce to a saucepan and heat for about 2 to 3 minutes until they are hot.
Step 2: Once they are hot, pour the sardines and all of the tomato sauce into a mixing bowl. Then add in 2 chopped lemongrass, 2 sliced shallots, 1 chopped spring onion, 2 sliced red chillies, 2 tbsp of fish sauce, and 2 1/2 tbsp of lime juice. Toss the salad until everything is thoroughly mixed together, then add in 1/2 cup of mint leaves. Mix one final time, then serve and enjoy!
We had ours served with some sliced cucumber, steamed jasmine rice, and a simple omelette to complete the meal.
