Thai Steamed Eggs Recipe (Kai Toon)

Thai steamed eggs are great to have for breakfast, as an appetiser, or just as a quick and tasty snack. They are very simple to prepare, and the texture is very light and fluffy – it almost dissolves in your mouth. This dish is low in calories and is a great way to liven up eggs if you are bored with scrambled and fried eggs.

Feel free to experiment adding different vegetables, and you can also add minced pork the eggs if you wish. This is a very customisable dish so go ahead and add whatever you want!

  • 2 eggs
  • 1/2 cup of water
  • 5 slices of shiitake mushroom
  • 3/4 tbsp soy sauce
  • Slice of carrot
  • Sliced coriander for garnish
  • Sliced spring onion for garnish

Step 1: Add 2 eggs to a bowl, and beat thoroughly. Then add 1/2 cup of water and mix with the eggs.

Step 2: Add 3/4 tbsp of soy sauce and mix with the eggs.

Step 3: Pour the eggs through a strainer to remove any thick bits. Pour them into a dish that is suitable for steaming. Add a slice of carrot to the eggs and place the lid on the dish.

Step 4: Place the dish into a steamer and steam on a low heat for 10 minutes. After 10 minutes carefully remove the lid and add a few slices of shiitake mushroom on top of the eggs, along with some sliced coriander and sliced spring onion. Place the lid back on and steam for a final 5 minutes, then serve. If you wish you can top with garlic oil, soy sauce and pepper.
