A delicious stir fry that is ready in a matter of minutes, this is a popular way to serve crab in Thailand, and after tasting this recipe, its easy to see why. This recipe is mild, salty, and works great as a main meal served with jasmine rice.

You can use any part of the crab, but we used claws on this occasion as they were more easily available.

  • 250g (8.8 oz) of crab claws
  • 2 eggs
  • 1 clove of chopped garlic
  • 1 tablespoon of curry powder
  • 1 sliced spring onion
  • half an onion sliced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of oyster sauce
  • 2 tablespoons of whole milk
  • 1 tablespoon of cooking oil

Step 1: Heat 1 tablespoon of oil on a high heat in a wok

Step 2: When the wok is hot, add the garlic and onion and fry until the onion is light brown.

Frying The Garlic And Onions

Step 3: Add the eggs and mix until the eggs are scrambled together with the garlic and onions, then add the fish sauce, soy sauce and oyster sauce, and stir.

Adding The Eggs To The Stir Fry

Step 4: If you are using cooked crab claws, add them now and stir. If you are using raw crab claws, add them with the eggs.

Step 5: Add the milk and curry powder, stir, and fry for a further 2 minutes.

Step 6: Finish by adding in the spring onions, mix in, and serve.
