This is tom yum soup with a twist. The udon noodles are great for soaking up the soup, which is packed with herbs and flavours. We have used mixed seafood in this recipe, but you can mix and match depending on your own preference. Very tasty, very filling, and surprisingly quick and simple to make once you have prepared all of the ingredients.

Step 1: Add 2 red bird eye chillies and 1 tbsp of coriander stalks to a mortar and pestle, and briefly crush them until the chillies break open. Then add 4 shallots and crush until the shallots have broken open.
Step 2: Now we will prepare the noodles. As we are not using dried noodles, we only need to cook them long enough to heat them up. Add 300g of udon noodles to a pan of boiling water and cook for a couple of minutes until they are hot. Drain the noodles and set aside in a bowl.
Step 3: Next we need to make the soup. Boil about 650ml of water in a pan, and then dissolve 1 chicken stock cube in the water. Once dissolved, add to the pot 1 sliced lemongrass, 6 slices of galangal, the ingredients we lightly crushed in our mortar and pestle earlier, and 1 tomato cut into quarters. Give everything a good stir and allow the soup to boil for about 2 to 3 minutes.
Step 4: Now add 2 tbsp of tom yum style chilli paste, and stir the soup until the chilli paste has dissolved.
Step 5: Now add 6 lime leaves, tearing the leaves up first, 4 tbsp of fish sauce and 4 tbsp of lime juice. Stir and let the soup simmer for about 2 minutes.
Step 6: Now add the mixed seafood, and gently stir. Let the seafood cook for a couple of minutes, then add 4 white mushrooms which have been cut into quarters. Stir and let the soup cook for about 2 to 3 minutes.
Step 7: Finally, add 4tbsp of evaporated milk, stir, and cook the soup for a final 5 minutes, ensuring that all of the seafood is cooked.
Step 8: Now you are ready to serve. Simply spoon the seafood and soup onto the udon noodles that we cooked earlier, garnish with some spring onion and coriander, and enjoy!
